Sust, in Piedmontese, means desire, craving, but it also means “to care for”, “to have at heart”. Our Nebbiolo is an understated wine, without excesses, that makes you want to drink it. It is a wine of the Savoy region, of few words. The cultivation of Nebbiolo in this area of Piedmont requires special care and a thorough knowledge of the pedo-climatic characteristics of every land parcel cultivated. The cultivation solutions developed are the espalier system with Guyot pruning and an original cultivation system invented by Remo called “double row”.

Ageing
18 months in 25 hl barrels and six months in the bottle
In the cellar
The destemmed and crushed grapes ferment in steel. Maceration lasts about 20 days and is accompanied by punching down and pumping over. Malo-lactic fermentation and refinement are carried out in 25 hl barrels, where the wine ages for 18 months
In the glass
Colour: with intense highlights and a dark garnet rim.
Bouquet: fine, elegant, with good persistence and classic ethereal varietal scents, with hints of violet and sour cherry, and faint spicy notes.
Palate: impressive structure and a thick, characteristic tannic texture, long with an aftertaste of ripe fruit and dog rose.

Accompanies slow-cooked meat dishes, game and mature cheeses, but also pasta dishes such as tagliatelle with meat sauce
