Calliope Brut - Erbaluce di Caluso DOCG Spumante

This is the reserve sparkling wine that was created following the celebration of the poet Guido Gozzano in the Castle of Aglié. It was in the mid-1990s. In France, Remo had seen that the great Champagne houses used wood to lend elegance to their most prestigious reserves. So part of the grapes ferment in small oak barrels and spend nine months on noble lees in the barrel.

In the cellar

After soft pressing, a third of the must ferments in small oak barrels and spends about nine months on noble lees in the barrel. The wine is then blended with Erbaluce vinified in steel tanks and is ready for bottle fermentation. After spending at least 48 months on lees, the bottles undergo manual rémuage (riddling) on racks known as pupitres and dégorgement (disgorging). After a further six months of bottle ageing, Calliope sparkling wine is ready to be uncorked.

In the glass

Colour: straw yellow with golden highlights.
Perlage: very fine and persistent bubbles.
Bouquet: fresh, intense with scents o golden delicious apple and vanilla, reminiscent of pineapple and wildflowers.
Palate: full and harmonious, nice acidic vigour supported by good structure, with long and persistent sensations of yeast and crusty bread

With food

Excellent aperitif and for service with all courses of a meal, with strongly flavoured, mature cheeses. Perfect with elaborate fish and tasty sauces.
Serve at 8-10°C.
